  • 4 pieces of cod loin not too thick
  • 1/4 l olive oil
  • 6 cloves of garlic
  • 1 chili pepper

  • Preparation
  • Desalt the cod for 36 hours, changing the water 3 or 4 times.
  • At the end of this time, remove the scales and bones and dry well with a clean cloth.
  • Cut the garlic into thin slices and fry them gently in a dish with the olive oil.
  • When they turn golden, remove and set aside.
  • Add the cod to the same oil and let it simmer for 10 minutes more or less depending on the thickness of the pieces of cod.
  • Put another earthenware dish to heat up and add a little of the oil from cooking the cod.
  • When it is warm, place the pieces of fish in the dish with the skin underneath.
  • Swirl the casserole dish gently, and at the same time gradually adding the remaining oil.
  • When it is cooked, garnish the cod with garlic and some chili pepper rings.
