Ingredientes
  

  • 8 eggs
  • 1 large onion
  • 100 g of green beans
  • 1 small courgette/ zucchini
  • 1/2 a red pepper
  • 75 g of peas
  • 1 green pepper
  • 150 g of potatoes
  • 50 g of spicy sausage
  • 1/2 cup of olive oil
  • Salt

  • Preparation
  • Mince the spicy sausage, leaving a few slices for garnish.
  • Peel the potatoes, wash them and cut them into thin slices.
  • Cut open the pepper, take out the seeds and dice it.
  • Trim the green beans if necessary and dice them.
  • Peel the onion and dice it finely.
  • Heat the oil in a wide-based frying pan and sauté until transparent.
  • Add the spicy sausage, stir a few times and add the vegetables, leaving to cook on a low flame until all the vegetables are soft; drain in a sieve to remove any excess oil.
  • Beat the eggs in a wide bowl, add the vegetables and the spicy sausage, season, mix well and prepare the omelette with a little oil in a pan.
