  • 4 large pears peeled, halved lengthwise, and cored
  • 4 cups red Rioja wine
  • 2/3 cup sugar
  • 1 cinnamon stick
  • 2 Tbs strawberry raspberry or apricot preserves

  • Preparation
  • In a saucepan just large enough to comfortably hold the pears, combine the pears, wine, sugar and cinnamon stick.
  • Bring to a boil over high heat.
  • Reduce the heat to low, and cook for about 30 minutes or until the pears are tender when pricked with a fork.
  • Lift out the pears carefully and set them aside to cool.
  • Remove and discard the cinnamon stick.
  • Add the preserves to the pan, raise the heat and boil for 5 minutes, stirring constantly, until the preserves melt and the sauce is smooth.
  • Serve two pears halves on each plate and spoon the sauce over them.
