  • 2 cans palm hearts chopped
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • Salt and pepper to taste
  • 2 large eggs beaten
  • 1/4 cup parsley chopped
  • 2 medium pie crust

Method
 

  1. Preparation
  2. Saute onion in oil for 10 minutes.
  3. Add palm hearts, saute 3 minutes.
  4. Add remaining ingredients, mix well and cook until egg sets.
  5. Spoon into pie crust, top with other pie crust, vent and bake at 400 degrees for 20 minutes or until lightly browned.
