  • 1 cup 16 tbsp flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tbs. cocoa
  • 1 tsp. cinnamon
  • 2 eggs
  • 3/4 cup 12 tbsp sugar
  • 1/4 cup 60 ml vegetable oil
  • 1/2 cup 120 ml cola
  • 1 tsp. vanilla
  • 1 cup grated carrots
  • 1/2 cup 8 tbsp chopped walnuts
  • 1/2 cup 8 tbsp shredded coconut

  • Preparation
  • Preheat oven to 325F (165C). Butter and flour an 8-inch (20cm) square baking pan.
  • Sift the flour, baking powder, baking soda, salt, cocoa, and cinnamon together into a large mixing bowl.
  • In another bowl, beat the eggs, sugar, and oil together and add to the dry ingredients. Stir only until the ingredients are somewhat consistent, not completely smooth.
  • Stir in the cola, vanilla, carrots, walnuts, and coconut, once again only stirring as much as necessary. Pour into baking pan and immediately put in oven. Bake approx. 75 minutes, or until a toothpick inserted into the center comes out clean.
  • Optional: Top with a frosting made of 3 oz. (85 g) cream cheese beaten with 1 tbs. milk and 1 tsp. grated orange or lemon rind. Gradually beat in 3/4 cup powdered (confectioners') sugar, until fluffy and smooth.
