Ingredientes
  

  • 5 very ripe plantains
  • 1/3 cup of butter
  • 2 1/2 cups of brown sugar
  • 2 tbsp. water
  • 1/2 lb. sharp yellow cheese
  • 1/2 cup cracker crumbs
  • 2 tsp. cinnamon
  • 1 1/2 tsp. all spice
  • 1/2 cup raisins
  • 1/2 cup dry sherry

  • Preparation
  • Peel and cut in half lengthwise the plantains.
  • Melt butter in a heavy skillet.
  • Fry the plantains until golden brown and remove from the skillet.
  • Stir brown sugar and water into the drippings until the sugar is dissolved:
  • Remove from the heat.
  • Mash the plantains well, adding the brown sugar mixture.
  • Grate cheese and add to the plantains.
  • Preheat oven to 350°F.
  • Stir in cracker crumbs, cinnamon, all spice, raisins, dry sherry.
  • Mix the ingredients well and pour into a well buttered casserole.
  • Bake for about 40 minutes. Do not permit the pudding to become dry.
