  • 1/2 glass of water

  • Preparation
  • Place the cold oil with the water and a pinch of salt in an earthenware dish over a low flame (it is best to cover it).
  • When the water has evaporated, fry the peeled and sliced courgette along with the onions, cut in julienne strips.
  • Place the vegetables in a colander.
  • Then beat the eggs and mix with the courgette and the onion.
  • Place in an earthenware dish to set.
