Ingredientes
  

  • 3 vegetable pears rinsed
  • 1 cup cottage cheese
  • 7 purple salad leaves 1/2 lb baby field greens or mesclun, rinsed and dried
  • Vinaigrette
  • Pepper to taste

  • Preparation
  • Bring 2 quarts water to a boil in a saucepan over high heat. Add vegetable pears.
  • Reduce heat to medium-low until vegetable pears are tender, about 20 minutes.
  • Drain and transfer vegetable pears to a cutting board. Skin vegetable pears. Cut them in thin slices.
  • Toss purple salad greens and mix with vinaigrette in a bowl. Place the mix in a platter.
  • Arrange vegetable pear slices over salad mix.
  • Add a teaspoon cottage cheese over each vegetable pear slice.
  • Drizzle fresh ground pepper to taste.
