VEGGIE VEGAN BURRITOS

Ingredients

  • 1 tablespoon oil
  • 1 onion
  • 1 zucchini
  • 1 red or green bell pepper
  • 1 tomato
  • 1 avocado
  • 1 lime
  • Salt and pepper, to taste
  • Dash of chili pepper powder
  • Cilantro for garnish
  • Flour or corn tortillas

Preparation

Wash and slice all vegetables.

In frying pan, sauté onion, zucchini, and bell pepper in oil for 2 minutes or until tender.

Add salt & pepper, chili powder.

In a large plate, place a sheet of tortilla.

Place cooked veggies, 2 slices of tomato and avocado, a squeeze of lime juice on top of tortilla.

Wrap it up, and garnish with a sprig of cilantro.
