SOPA FRIA DE MANGO (COLD MANGO SOUP)

Ingredients

  • 4 cups peeled, pitted, and chopped ripe mango, or an equal amount of frozen mango
  • 1 cup plain yogurt
  • 6 mango slices for garnish
  • 2 tablespoons sugar
  • 3/4 cup heavy cream
  • 6 fresh mint sprigs for garnish
  • 2 cups Goya mango nectar (a thick fruit juice, available in supermarkets)
  • Dash of Cointreau or other orange-flavored liqueur

Preparation

Puree the mango in a food processor fitted with a steel blade or in a blender.

Add the remaining ingredients, except the garnishes, and process until smooth.

Process in batches, if necessary.
