SALSA DE AJI (HOT SALSA)

Ingredients

  • 2 large tomatoes, seeded, finely chopped
  • 1 medium onion, finely chopped
  • 1 tbl cilantro, chopped
  • 4 large aji chillies, seeds and stems removed (or yellow wax hot chillies or jalapeños if aji chillies are not available)
  • 1/2 cup water
  • Salt, to taste

Preparation

Combine the tomatoes, onion and cilantro in a bowl.

Place the chillies, water and 3 tablespoons of the tomato, onion, cilantro mixture in a blender or processor and puree until smooth.

Add the chilli puree to the remaining mixture and mix well.

Salt to taste.

Ecuadorians often add beans to their salsa, just add cooked beans, or add 1 teaspoon peanut butter with the chillies in the blender and follow the above recipe.
