PICO DE GALLO RELISH

Ingredients

  • 1 medium avocado, chopped
  • 3 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 1 teaspoon jalapeño pepper, finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 tablespoon canola oil (or other vegetable oil)
  • Salt to taste
  • Freshly-ground black pepper to taste

Preparation

In a small bowl, combine tomato, onions, jalapeno, cilantro, lime juice. Add salt to taste.

The onions will be "cooked" with the lime juice, so that the flavor is not that strong. The salt is important.

Refrigerate 12 hours to let the flavors blend.

Add the avocado just before serving.
