PERUVIAN MASHED POTATO CAKE ("CAUSA")

Ingredients

  • 3 cups leftover mashed potato
  • 1 juice of one lime
  • 1 tsp turmeric
  • 2 green onion, chopped
  • 1/4 cup mayonnaise
  • 1 7 oz can tuna, drained
  • 1 avocado, chopped
  • 1 handful olives
  • 2 hard-boiled egg, peeled, and chopped

Preparation

Stir the lime juice and turmeric together and then add it to the mashed potatoes stirring until they become a uniform yellow.

Spread half of the potatoes onto a serving plate.

Mix the green onions, mayonnaise and tuna together and spread over the potatoes.

Spread the remaining potatoes over top.

Sprinkle with chopped avocado, olives and egg.
