Ingredients

  • 8 stale ensaimadas (spiral shaped pastries)
  • 8 eggs
  • 1 litre of milk
  • 300g of sugar
  • Butter
  • 1 lemon
  • Cinnamon

Preparation

Boil the milk and then allow to cool.

Add the well beaten eggs.

Add the ensaimada in pieces, the sugar and a little grated lemon rind.

Grease a mould with butter and put the mixture into it.

Put in a moderate oven for about half an hour.

Turn it out when it has cooled and dust with cinnamon.
