HAKE IN GREEN SAUCE (MERLUZA EN SALSA VERDE)

Ingredients

  • 2 lbs hake fillet, cut into 16 pieces (or any firm white fish you like)
  • 1 cup unbleached all purpose flour
  • Salt
  • Cup olive oil
  • 2 garlic cloves, minced
  • 3 Tbs dry white wine
  • Cup minced flat leaf parsley

Preparation

Spread the flour in a shallow dish or bowl.

Sprinkle the fish fillets on both sides with salt and then dredge in the flour.

Shake off excess flour and set aside.

In a large skillet or sauté pan, heat the olive oil over medium heat.

Add the garlic and sauté for about 1 minute until just golden brown.

Do not let burn or it will turn bitter.

Lay the fish in the pan in a single layer and cook over medium-low heat for 1 or 2 minutes per side until it is opaque throughout.

Add the wine and parsley and simmer for 1 minute shaking the pan gently to prevent sticking.

Garnish with a little more parsley if you like and serve immediately.
