ECUADOREAN CHICKEN STEW

Ingredients

  • 2 lb chicken pieces
  • 2 tbl oil
  • 1 red onion, chopped
  • 2 garlic cloves, crushed
  • 1 green pepper, chopped
  • 2 tomatoes, peeled, seeded and chopped
  • 1 hot (chili) pepper, whole
  • 2 tbl chopped coriander
  • 3 cup beer
  • Salt, pepper and cumin to taste

Preparation

In a large saucepan, heat the oil and sauté the onion, garlic, tomatoes, green pepper and coriander.

Season with salt, pepper and cumin.

Add chicken and cook, stirring for a few minutes.

Add beer and whole hot pepper.

Cover and cook at medium heat until tender (about 30 minutes).

Serve with yellow rice and fried ripe plantain.
