• 2 litres full fat milk
  • 12 tbsp sugar
  • 1 tbsp vanilla


Over a medium high heat, heat the milk in a large pan.

When boiling, add 1-2 teaspoons of sugar every 5 minutes.

After approx 30 minutes when all the sugar has been added, add the vanilla.

Remove from heat when the mixture gets a 'crumbly' texture.

Be careful not to let the mixture burn or get darker than a light tan color.

Mix to a paste and serve when cool.

The cheat or easy version of this recipe is to use a can of sweetened condensed milk, which takes just a short time.

Empty the contents into a saucepan and heat over a medium low heat.

Stir constantly until the liquid is of the desired consistency.

Allow to cool, mix again and serve.
