• 4 small baking potatoes, peeled
  • 1 tbs margarine, melted
  • 1 tsp olive oil
  • 1 tsp dried basil
  • 3 tbs fresh bread crumbs
  • 3 tbs grated Parmesan chesse
  • 1 1/2 tsp water


Preheat oven to 400ºF, and spray a baking sheet with vegetable cooking oil.

Cut each potato in half diagonally into 1/4 inch slices, keeping the slices together.

Use a spatula to place each potato on a baking sheet.

In a cup mix the margarine, oil and basil. Brush over the potatoes, and bake for half hour.

In other cup mix the bread crumbs, Parmesan chesse and water, and sprinkle over the potatoes.

Bake for about 10-15 minutes until browned and tender.

Serve immediately.
