COCONUT ICED SOUP

Ingredients

  • 2 tsp curry powder
  • Flesh from 1/2 coconut
  • 300ml water
  • 250ml chicken stock
  • Salt and black pepper, to taste

Preparation

Combine all the ingredients in a blender and purée until smooth.

Transfer to a refrigerator and chill until you are ready to serve.

Pass the soup through a fine-meshed sieve, pressing down well with the back of a spoon to extract as much liquid as possible.
