• 4 cups sweetened flaked coconut (14 oz package)
  • 1 can (520 ml) coconut water, passed through a sieve to discard the pulp
  • 375 g white sugar
  • ¼ teaspoon ground cloves
  • Juice of one lime
  • Raisins to garnish


In a medium-sized pot add in the coconut flakes, sugar, ground cloves, and lime juice.

Stir with a wooden spoon to combine.

Cook over medium-high heat stirring from time to time for about 25-30 minutes.

The mixture is ready when the liquid has evaporated, when it gets tan colored, and when it sticks to the sides of the pot.

Turn the heat off and let cool for 10 minutes.

On parchment paper start forming the balls with a spoon and top each ball with a raisin.

Let the balls sit to dry then remove carefully from the paper.
