BREADFRUIT, AVOCADO AND COD FISH SALAD

Ingredients

  • 1 lb salted cod
  • 1/4 cup onion, diced
  • 3 potatoes, cut into wedges
  • 1/2 ripe breadfruit, diced
  • 3 eggs, hardboiled, cut into slices
  • 1 avocado, diced
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Preparation

Soak the salted cod over 4 hours, changing water twice to remove some of the salt.

Place cod in medium pan and boil for 5 minutes, separate and allow to cool.

Peel potatoes and breadfruit (optional), cut into wedges and boil until tender. Allow to cool.

Place potato wedges, breadfruit wedges, onions, and avocado in a bowl.

Break up cod fish into chunks. Place them on top of the vegetables and add hardboiled egg slices.

Lightly season with salt and pepper and drizzle olive oil over all the ingredients.
