BOLITAS DE COCO (COCONUT BALLS)

Ingredients

  • 2 2/3 cups sweetened condensed milk
  • 2 cups grated coconut
  • 1/2 cup unsalted butter
  • 15 Maria cookies (Galletas Maria), completely crushed; graham crackers quarters may be substituted

Preparation

Heat butter, condensed milk, and 1 1/2 cups grated coconut in a saucepan over high medium heat until golden brown.

Add crushed cookies. Stir until the mix is thick. Allow to cool.

Make small balls with the mix.

Sprinkle them with grated coconut and refrigerate for one hour.
