BANANA BREAD

Ingredients

  • 4 ounces (1 stick, or 113 grams) unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 4 ripe bananas
  • 1 tablespoons milk
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Preparation

Preheat the oven to 325F (165C). Grease and flour a loaf pan or an 8-inch cake pan.

Whisk the butter and sugar together for several minutes, until light and fluffy. Whisk in the eggs one at a time, beating well after each.

Puree the bananas and milk together in a bowl, mashing with a fork or whisk. Add the bananas to the butter mixture and blend thoroughly.

Combine the dry ingredients, then add them to the batter, stirring carefully only until the dry ingredients appear well mixed in. (If you like chocolate chips or walnuts in your banana bread, gently stir in a cup of either when you add the flour.)

Pour the batter into the pan. Bake 1 hour (depends on pan size and shape) or until the top is a deep brown and a toothpick inserted into the center comes out clean.
