• 1 baked pie crust (refrigerated; chocolate or graham cracker crust for this recipe)
  • 3 pints ice cream (preferably different types, such as chocolate, vanilla, etc.)
  • 3 egg whites
  • 1/2 tsp cream of tartar
  • 6 tbs sugar
  • 1 tsp vanilla


Scoop ice cream into baked pie shell (alternate flavors if applicable). Pack well and freeze till firm.

Beat room temperature egg whites with cream of tartar. Gradually add sugar. Beat till stiff and glossy. Beat in vanilla.

Remove pie and pile meringue on top of ice cream.

Bake in 500F oven for 4-5 minutes or until meringue is lightly brown. Serve immediately.
