Spanish-speaking South America can be separated into three main gastronomic regions: Andean Mountain cuisine in Ecuador, Bolivia and Peru with exotic and nutritious food, full of spice; Spanish influences in the North Central countries of Venezuela and Colombia, with rice dishes and seasonings like cinnamon, cumin and anise, alongside indigenous staples like corn and yuca; the Southern Cone countries of Argentina, Chile, Paraguay and Uruguay with grass- fed beef, stunning seafood and simple but flavorful accompaniments.
