Ingredients
800 g potato
3 eggs
1 small onion
2 cloves of garlic
3 tablespoons of flour
1/2 cup olive oil
1 sprig of parsley
6 of Saffron threads

Peel, wash and cut the potatoes into slices of 1 cm. approximately; sazonar_ them. Put flour on a plate, and beat the eggs in another. Pass the potatoes for flour and then beaten eggs. Freir in abundant hot oil.Make a majado with garlic, the saffron, parsley and salt.Heat approximately 3 tablespoons of oil and sweat onion, peeled and chopped, until begins to dorar_ are. Add 1 tablespoon of flour, give some fast laps and add the majado, stirring.Place potatoes in an earthenware dish, irrigate with the previous prepared and add 2 cups of water or stock. Zoom into the fire and when begins to boil, rectify the time and gentle simmer for 20 minutes, moving carefully from time to time.Remove from heat, sprinkle with chopped parsley and put them in the quite hot oven letting them bake 5-10 minutes more. |
