STUFFED PIQUILLO PEPPERS
Ingredients
- 12 piquillo peppers
- 200 g of lean minced pork meat
- 200 g of minced beef
- 1 teaspoon of sweet paprika
- 150 g of bechamel sauce
- 1 large onion
- Eggs
- Oil
- Salt
Preparation
Chop the onion very finely and saute it in an earthenware dish with a little oil.
When it is sauteed, but before it turns golden in colour, add the minced beef, then the pork and a teaspoon of sweet paprika and let it simmer for 10 minutes.
Then add the bechamel and mix well.
Check the seasoning, if necessary, and leave to cool.
Fill the peppers with the mixture and put them into the refrigerator, as this will make it easier to fry them later.
When the peppers are cold, coat them with flour and egg and put them into a frying pan on a medium heat, with a little oil.
Fry until they are golden in colour.
