LECHE FRITA (FRIED MILK)

Ingredients

  • 1 l milk
  • 200 ml of olive oil
  • 1 tablespoon of sunflower oil
  • 2 eggs
  • 50 g cornstarch
  • 50 g flour
  • 1 cinnamon stick
  • 100 g sugar

Preparation

Dilute the flour with the cornstarch and sugar in 1/4 l milk.

Boil the rest of the milk with the cinnamon stick for 10 minutes and gradually add to the above mixture.

Simmer the mixture over a gentle heat, stirring all the time, for 10 minutes.

Pour into a tin that has been lightly oiled with sunflower oil and leave to cool.

When cold, cut the custard into rectangles of about 10 x 5 cm.

Dredge the pieces in flour and beaten egg and fry them in the hot olive oil.

Drain off any excess oil and sprinkle with ground cinnamon and sugar.
