MIGAS EXTREMEÑAS (FRIED BREADCRUMBS)

Ingredients

  • 1 white bread loaf from the previous day
  • 2 dry red ñora pepper
  • 4 cloves of garlic
  • 200 g of bacon or pancetta
  • 1 tablespoon of sweet paprika
  • Oil
  • Salt

Preparation

Cut up the bread into dice the night before and wrap it in a damp cloth.

The next day fry garlic and peppers in a large pan and add the chopped bacon or pancetta.

When everything is well fried, add the paprika and then the breadcrumbs.

It is important to keep stirring so that the breadcrumbs are golden and do not stick together.
