CRISPY SHRIMP PANCAKES
Ingredients
- 200 grams of shrimps
- 1 small onion
- 1/2 kilo of wheat flour
- 100 ml beer
- 1 small sprig of parsley
- Olive oil
Preparation
Heat a pan of water and, when it boils, add the shrimps.
Return it to the boil, then remove and with a spatula or ladle, remove the shrimps but keep the water.
Place the flour in a pan, add the onion and finely chopped parsley, next add the beer and stir, adding some of the shrimp water, until it forms a batter.
Lastly, add the shrimps to the mixture and stir to achieve an even consistency.
Meanwhile, heat a frying pan with abundant oil and when it is very hot, add spoonfuls of the mixture, spreading them out as you add them so that the pancakes are of the same size.
When they are golden, remove from the heat.
