BACALAO AL PIL-PIL (SIZZLING COD)
Ingredients
- 4 pieces of cod loin, not too thick
- 1/4 l olive oil
- 6 cloves of garlic
- 1 chili pepper
Preparation
Desalt the cod for 36 hours, changing the water 3 or 4 times.
At the end of this time, remove the scales and bones and dry well with a clean cloth.
Cut the garlic into thin slices and fry them gently in a dish with the olive oil.
When they turn golden, remove and set aside.
Add the cod to the same oil and let it simmer for 10 minutes more or less depending on the thickness of the pieces of cod.
Put another earthenware dish to heat up and add a little of the oil from cooking the cod.
When it is warm, place the pieces of fish in the dish with the skin underneath.
Swirl the casserole dish gently, and at the same time gradually adding the remaining oil.
When it is cooked, garnish the cod with garlic and some chili pepper rings.
