CARROT-COLA CAKE

Ingredients

  • 1 cup (16 tbsp) flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tbs. cocoa
  • 1 tsp. cinnamon
  • 2 eggs
  • 3/4 cup (12 tbsp) sugar
  • 1/4 cup (60 ml) vegetable oil
  • 1/2 cup (120 ml) cola
  • 1 tsp. vanilla
  • 1 cup grated carrots
  • 1/2 cup (8 tbsp) chopped walnuts
  • 1/2 cup (8 tbsp) shredded coconut

Preparation

Preheat oven to 325F (165C). Butter and flour an 8-inch (20cm) square baking pan.

Sift the flour, baking powder, baking soda, salt, cocoa, and cinnamon together into a large mixing bowl.

In another bowl, beat the eggs, sugar, and oil together and add to the dry ingredients. Stir only until the ingredients are somewhat consistent, not completely smooth.

Stir in the cola, vanilla, carrots, walnuts, and coconut, once again only stirring as much as necessary. Pour into baking pan and immediately put in oven. Bake approx. 75 minutes, or until a toothpick inserted into the center comes out clean.

Optional: Top with a frosting made of 3 oz. (85 g) cream cheese beaten with 1 tbs. milk and 1 tsp. grated orange or lemon rind. Gradually beat in 3/4 cup powdered (confectioners') sugar, until fluffy and smooth.
