ATOL DE ELOTE (HOT CORN-BASED BEVERAGE)

Ingredients

  • 2 cups yellow corn grains
  • 4 1/2 cups cold water
  • 1 cinnamon stick
  • 1 cup sugar
  • 1/2 teaspoon salt

Preparation

Cook the corn grains until they are still a little hard. Blend them with 3/4 cup of water. Blend them little by little.

Strain it and add other 3 1/2 cups of water, the cinnamon stick and sugar.

Boil it on a very low flame, stir constantly. Add salt when it's boiling and continue cooking until the corn is completely cooked (about 10 minutes).

Sprinkle cinnamon on top and serve hot.
