ARTICHOKES WITH HAM

Ingredients

  • 1 kg artichokes
  • 2 slices of ham, not too thin
  • 1 onion
  • 2 cloves of garlic
  • 1 carrot
  • Oil
  • Salt
  • White wine
  • Lemon

Preparation

Remove the tips, stem and outer leaves from the artichokes.

Rub the artichoke hearts with half a lemon and put them in boiling water with salt and another squeeze of lemon juice.

After cooking for 10 minutes, drain.

Put 4 tablespoons of oil in a deep-bottomed earthenware dish and grate the onion and carrot over, adding the finely chopped garlic.

When it has been sauted for a few minutes, add the ham cut into dice, turn and add the artichokes, salt, half a wineglass of water and half a glass of white wine.

Simmer for 15 minutes and serve hot.
